Healthy Pancakes

This has to be one of my favourite clean recipes and like all my recipes it is super easy.

You see I am a busy babe just like you and I don’t have time for fancy, 50 ingredient recipes that take over 2 hours to make. I am actually not sure who does have time for those?

This recipe came after many trial and errors trying to make pancakes that were gluten free, sugar free and actually resembled a pancake.



2 ripe bananas

4 eggs

1 tbsp oat bran (use gluten free oats and whiz in the food processor to form a flour)

1 tbsp coconut flour (can be replaced with protein powder of your choice)

1 tsp gluten free baking powder (buy from any health food store)


Put all ingredients in a food processor.
Whiz until even consistency. (If the batter feels too runny add more coconut flour, if you feel it is too thick add some almond milk. consistencies may vary depending on the size of your bananas).
Grease your pre-heated fry pan with coconut oil, and pour your pancake mix in creating your perfect size pancakes. A tip keep them smaller as they can be difficult to flip when bigger depending on your preferred consistency…
Once cooked, plate up and add whatever ingredients over the top your heart desires. I choose between cinnamon, goji berries, homemade granola, yoghurt, honey and berries or you can add them all for a full feast!
